Vegetable
Rainbow Medley
Ingredients
1 green or yellow zucchini
1 leek (discard the top dark green part of leek and bottom
root of bulb. Clean well and chop)
2 carrots
1 white or yellow corn on the cob
1 can of organic diced tomatoes
1 cup of yellow or green beans
1 red or orange bell pepper
Flavor
makers
¼ cup chives,
1-garlic clove, ½ cup of finely chopped cilantro
Seasonings: Add to taste a pinch or cumin, sea salt and
cayenne pepper.

Prep
Clean all vegetables well with water and separate the sauté
vegetable combination (leeks, corn, pepper, garlic)
In a sautéing pan, add olive oil to lightly coat
bottom of pan and heat to a medium temperature. Add vegetables
and garlic and sauté for about five minutes, stirring
a few times. Set aside.
Boil 4 cups of water. Add in the full can of tomatoes. Add
in simmer vegetables. Add in sauté vegetables. Simmer
for 20 minutes. Add in additional flavor makers and seasoning.
Simmer for ten more minutes.
Makes 4 bowls

Veggie Blend
Ingredients
1 thin slice of a
beet
1 large slice of a cucumber
2 stalks of celery
1 carrot
1 apple
Place ingredients in a blender on juice or liquefy or place
vegetables in a juicer. (I use Acme Juicer)

Blood purifier, energy boosting and naturally diuretic,
aids digestive tract

Ingredients
2 Yams
½ cup of finely chopped pecans
Quick
Prep
Peel the yams and wash well. Cut in ½
Steam 2 yams until soft (a fork should be able to cut the
yam in half when it is soft)
Put in a bowel and mash. Add powder seasonings-a few dashes
of cinnamon, one pinch of turmeric, cloves and ginger. Drizzle
agave on top. Mash one more time to blend. Serve warm in
cups and garnish with pecans.
Makes four small desert cups.

Granola Apple
Ingredients
1 apple
Filling
1 tsp. of Chopped Walnuts
½ tsp of Dried Raisons or Cranberries
1 tsp of muesli or granola
Sweetener Options: Honey or Agave or Maple Syrup

Prep
Microwave Option: Cut top of apple and remove inner core
to leave a small whole inside the apple to fill. Fill apple
with filling. Place in a microwavable paper bowl and cover
with a small paper plate. Microwave for 1 to 2 minutes.
Uncover and drizzle with sweetener.
Benefits
Vitamin B-Honey, Malic and Pectin Enzymes-apples,
anti-oxidants-dried fruit, walnuts-essential fatty acids
Sautee
Option
In a pan drizzle macadamia nut or walnut oil. Warm
the oil for a minute and add diced apples. Sautee a few
minutes until brown and add in nuts, granola and dried fruit.
Sauté for one minute. Turn off heat and place apple
mixture on a plate. Drizzle with sweetener.

Rejuvenation: Demystifying Botox, Radiesse, and HA Fillers”
There are a plethora of injectable facial products on the
market today and it may be overwhelming to choose which
product(s) is right for you. Dr. Kim will explain the facial
aging process from a plastic surgeon’s perspective
and “demystify” the indications, mechanisms
and duration of action of Botox® Cosmetic, hyaluronic
acid fillers (i.e. Restylane, Juverderm), and Radiesse (a
calcium microsphere facial filler). These three categories
of products, when used correctly after an expert facial
analysis, can sculpt your face, plump your lips and provide
temporary relief from signs of aging including worry lines,
and facial volume loss. Dr. Kim will simplify your choices
and present an algorithm for non-surgical facial rejuvenation.
About Dr.Betty Kim
Dr. Betty Kim attended the University of Washington
for her undergraduate studies with a major in biological
sciences. She then moved to attend the Ivy League's University
of Pennsylvania School of Medicine and graduated Alpha Omega
Alpha. She realized her passion for plastic surgery early
in medical school, drawn to the field's creativity and the
opportunity to positively impact a patient's quality of
life. Many patients were healthy and wanted to make a change
or had just started and/or won a battle with cancer and
desired reconstruction. Upon graduation, she was accepted
to the University of Pennsylvania's highly competitive,
integrated plastic surgery program. This program combines
all relevant surgical training that a plastic surgeon must
acquire- general and plastic- under one umbrella. Her residency
involved extensive training in the latest techniques in
breast and skin cancer reconstruction, pediatric plastic
surgery, and the most efficacious and up-to-date techniques
in cosmetic plastic surgery. She has published in plastic
surgery textbooks and journals and her work on lower lid
blepharoplasty (excess eyelid skin and fat removal), free
flap breast reconstruction, and lower extremity reconstruction
has been presented at national and international meetings.
Dr. Kim recently opened her office in Trumbull, CT and is
affiliated with Norwalk Hospital, Bridgeport Hospital, St.
Vincent's Medical Center, and Yale- New Haven Hospital.
She and her husband live in Fairfield, CT.
